When the holidays are over and you're still craving some home-cooked goodness, try these quick and easy recipes to keep the feast going.
Turkey Fajita Pitas: Cut a piece of pita or burrito bread in half to form a pocket. Scoop in slices of cooked turkey and top with salsa, peppers, onions, cheese or any of your favorite ingredients.
Cranberry Sauce: Melt leftover cranberry sauce and drizzle over ice cream. Or, mix the sauce with cream cheese and spread it over your morning bagel muffin or toast.
Stuffing Sandwich: Brush two slices of bread with melted butter, add leftover stuffing and cheese and make a grilled stuffing sandwich.
Green Bean Salad: Mix together cooked green beans and chopped pecans. Crumble some bleu cheese on top and add your favorite dressing. Try using leftover bread rolls as croutons.
Pizza Potato Cakes: Pat mashed potatoes into balls that are about half an inch thick and place on oiled baking sheet. Sprinkle with cheese and Italian seasonings (try basil and oregano) and bake for about 20 minutes at 450°F.
